Bereits mit 21 Jahren erhielt Justus Liebig (1803-1873) auf Vorschlag Alexander von Humboldts, den er in Paris durch Gay-Lussac kennengelernt hatte, eine Professur für Chemie an der Universität Gießen. Dort entwickelte er die Elementaranalyse zu einer hohen Perfektion und isolierte, synthetisierte und analysierte zahlreiche organische Substanzen.
Auf einer Reise durch England und Irland, verbunden mit einer Einladung der British Association for the Advancement of Science in Liverpool, besuchte er zahlreiche chemische Fabriken und wandte sich der angewandten Chemie zu. Auf Anregung der genannten Gesellschaft verfasste er 1840 einen Bericht zum Stand der organischen Chemie und Analytik unter dem Titel „Die organische Chemie und ihre Anwendung auf Agricultur und Physiologie". Er begründete damit das Fachgebiet der Agrikulturchemie, formulierte darin erstmals den Gedanken eines Kohlenstoffkreislaufes und löste damit zugleich zahlreiche kontroverse Diskussionen aus. Er schuf einerseits die naturwissenschaftlichen Grundlagen für die Agrikultur und entwickelte andererseits auch praktische Hinweise wie durch sein Gesetz des Maximums. Darin postulierte er, dass das Wachstum von Pflanzen bzw. deren Ertrag von dem in Böden am wenigsten vorhandenen Nährstoff bestimmt werde. Seine Untersuchungen lieferten damit die Ansätze für eine optimale mineralische Düngung. Bis heute bekannt ist auch Liebigs Fleischextrakt, den er in Folge seiner Untersuchungen zur Physiologie entwickelte. 1852 wurde Liebig an die Universität im München berufen, wo er sich weiterhin der angewandten Chemie vor allem im Bereich von Lebensmitteln und Ernährung widmete.
Der Kommentator
Georg Schwedt war bis zu seiner Emeritierung 2006 Professor für Analytische Chemie an der TU Clausthal. In der Reihe Klassische Texte der Wissenschaft hat er bereits die Bände zu Fresenius und Ostwald verfasst. Er ist Autor zahlreiche Fach- und Sachbücher.
Der Originalautor
